60 Day Cheesecake!
Here’s the recipe to that awesome cheesecake we had at the 60 Day dinner Tuesday night.
Ingredients:
Almond Flour Crust
2 Cups Almond Flour
1/3 cup butter – measure solid, then melt
3 tbsp erythritol/xylitol
1 tsp vanilla extract
Cheesecake Filling
5 – 8 oz packs of cream cheese, softened
1 +3/4 cup xylitol/erythritol
3 tbsp coconut flour
zest of 1 orange
zest of 1 lemon
5 large eggs
2 large egg yolks
1/2 tsp vanilla
Directions:
Make Crust – Preheat oven to 350 degrees
Grease a 9″ springform pan
Mix almond flour, melted butter, erythritol/xylitol, and vanilla extract
Press dough into pan (I used plastic wrap to keep dough from sticking to me while pressing)
Bake crust 10-12 minutes until partially golden
let cool at least 10 minutes
Make Filling – Preheat oven to 500 degrees
Beat together using heavy duty mixer; cream cheese, xylitol/erythritol, coconut flour, and zests
Add eggs and yolks 1 at a time
Add vanilla – continue to mix on low until smooth and well mixed
Put pan in a shallow cookie sheet
Pour filling into crust – spread evenly
Bake on middle rack for 12 minutes
Reduce temperature to 200 degrees for about 1 hour (until cake is mostly firm)
Cool, then chill for at least 6 hours
