60 Day Cheesecake!

Here’s the recipe to that awesome cheesecake we had at the 60 Day dinner Tuesday night.


  1. Almond Flour Crust

  2. 2 Cups Almond Flour

  3. 1/3 cup butter – measure solid, then melt

  4. 3 tbsp erythritol/xylitol

  5. 1 tsp vanilla extract

  6. Cheesecake Filling

  7. 5 – 8 oz packs of cream cheese, softened

  8. 1 +3/4 cup xylitol/erythritol

  9. 3 tbsp coconut flour

  10. zest of 1 orange

  11. zest of 1 lemon

  12. 5 large eggs

  13. 2 large egg yolks

  14. 1/2 tsp vanilla


  1. Make Crust – Preheat oven to 350 degrees

  2. Grease a 9″ springform pan

  3. Mix almond flour, melted butter, erythritol/xylitol, and vanilla extract

  4. Press dough into pan (I used plastic wrap to keep dough from sticking to me while pressing)

  5. Bake crust 10-12 minutes until partially golden

  6. let cool at least 10 minutes

  7. Make Filling – Preheat oven to 500 degrees

  8. Beat together using heavy duty mixer; cream cheese, xylitol/erythritol, coconut flour, and zests

  9. Add eggs and yolks 1 at a time

  10. Add vanilla – continue to mix on low until smooth and well mixed

  11. Put pan in a shallow cookie sheet

  12. Pour filling into crust – spread evenly

  13. Bake on middle rack for 12 minutes

  14. Reduce temperature to 200 degrees for about 1 hour (until cake is mostly firm)

  15. Cool, then chill for at least 6 hours
