Feast or famine… one of my patients was discussing with me the prowess of their home garden. I returned how happy I have been with my two tower gardens at my house, and the third at the office. But then… it is all going to go away soon. We both trailed off… staring into the distance, wondering what we could hope for once the season changed.
Too many vegetables today… too few tomorrow. And it is truly the way of the seasons, so my recommendation is to dig in like crazy right now. My recommendation is and always has been (for about a decade now) to eat 10 servings of vegetables a day, and 3 servings of fruit. The diminishing return of the nutrition present in these foods, really kicks in around 13-14 servings… meaning, you are getting a lot of value for every serving you add up to 13. Which may seem crazy, but in a world where you should be actively pursuing every solution to health that makes sense… this one is one of them. Eat more veggies.
The sugar craze has grown exponentially over the last 50 years. Early 1970 was the beginning of low fat, it got crazy by the 80’s and has continued to grow up until hitting its peak in roughly 2014. This move towards low fat was like an ocean liner chugging along in the Atlantic, and that huge wake behind it… that’s sugar. Yep. If you take away fat, everything tastes horrible, and so sugar becomes the solution.
Just for the record, not everybody reading this understands that I can argue for the consumption of fat over sugar all day long, and will win every single time, and all of your health will improve because of it. Fats are necessary for health, every single cell is surrounded by fat… sugar comes into the blood stream from all carbohydrate, and though it is a necessary fuel for parts of your body, it is really unnecessary as a fuel. Easy, but unnecessary… but lets get back to veggies.
So, if we are trying to find health, and we know sugar is not our best friend, and the nutrition in vegetables is necessary to maintain normal function over time (and when I say over time, I mean it might take years to figure out how messed up we are from our lack of nutrition). Then we really should dig in while the digging in is good. If you don’t grow food, the likelihood is that you know somebody who does, and they might be a good source of fresh veggies, hopefully not sprayed. I would ask. Push now, push for 13 servings a day, make a step in the right direction, and then join us at the end of September/beginning of October for the 60 Day Turnaround.
One really good thing though… the greens that are the absolute richest source of nutrient of all vegetables, grow absolutely fabulously all winter long. Kale, and collards. Whoot Whoot!
