I am currently 120 Days into the 60 Day Turnaround. I have been playing with this one a bit more than others in the past. Finding the right mix of dairy to be satiated. Substituting a peach for berries during our peach harvesting season. Adding some 80% dark chocolate in as I approached the 80 day mark, just to see how it made me feel, and if it made any changes to my metabolism of fats in my mind.
I have another 35 days to go before I plan on breaking. But I will likely pick back up on the other side. I will say, I am not leaner than I have been in the past, and I am not stronger or fitter. But I am the same. There is a constant to eating with rules, without grains, and without sugar. I noticed in the ONE week off that I took over spring break, and I had ice cream, and I had some sugar, and I might have had one day of grains (I don’t recall if i ate the pizza or not, I think i did… :).
But on that one week, I had bloated, and I had felt uncomfortable, my hunger came on (hunger is almost non-existent when you eat 60 Day/Straight 60). I also realize, if I want to be really lean, I need to kill the dairy completely. When I go off of dairy, I end up losing about 5 lbs in a couple days, and I can see my lower abdominal muscles reveal themselves more than is typical for me. Thus, the casein in dairy is likely my culprit. Which is a protein, so if I were to go to a 100% milkfat only – butter and heavy cream. I would likely stay leaner and not bring that inflammation back.
Last night my daughter Ansley wanted to make a dessert that her mother and I could eat while on 60 Day, so she made a strawberry crumble for us.
The basic design was to make a cashew/almond flour crust with eggs, butter, and some stevia. Then mix frozen strawberries with xylitol and coconut flakes. Top that with a crumble of coconut flour, butter and xylitol, and bake it all. Top with heavy whipping cream that was prepared with xylitol and vanilla.
It came out great. And the wonderful thing about it, was that it was so easy, that Ansley did most of it by herself.
